We’re celebrating Pi Day the best way we know how--baking pies! We’re getting super seasonal with these sweet, yet tart, Ruby Red Grapefruit Mini Pies. Our non-stick Pro-Release Bakeware makes these even easier to bake & enjoy. Ruby Red Grapefruit Mini Pies 1 1/4 cups unbleached all-purpose flour 1 Tbs. sugar 1/4 tsp. salt 1 stick cold unsalted butter, cut into 1/4-inch cubes 3 Tbs. very cold water 1 cup sugar 1/2 cup water 4 room temperature egg whites ¾ cup sugar 1 ½ cups grapefruit juice 6 large egg yolks 6 tablespoons butter, cut in cubes Make basic pie dough and rest in the refrigerator overnight. Roll dough and cut into circles, place dough in muffin pans, and blind bake for 20 minutes, using pie weights or beans. Make grapefruit curd using a double boiler on the stovetop. Strain curd, whisk in butter, and spoon into prepared pie crusts. Cool, and top with whipped meringue. Using a blowtorch toast the meringue until slightly browned.
